PAO DE QUEIJO - BRAZILIAN CHEESE BREAD (VEGETARIAN)

Pão de queijo is probably Brazil’s most famous food export. Very similar to gougeres, pao de queijo is basically a pate a choux, but made with tapioca flour instead of wheat flour and parmesan cheese. Served cold or warm.

MINI PRAWN OKONOMIYAKI (AVAILABLE VEGETARIAN)

Popular street food from Osaka, Japan, Okonomiyaki is a savory version of Japanese pancake, made with flour, eggs, shredded cabbage, and prawns, topped with okonomiyaki sauce, Japanese mayonnaise, dried seaweed, and dried bonito flakes. For the vegetarian version, I will replace prawns and bonito flakes with kimchi.

MOQUECA (BRAZILIAN FISH AND PRAWN STEW) SERVED WITH LEMON RICE & CASSAVA FLOUR WITH ONIONS AND COCONUT (GLUTEN FREE, LACTOSE FREE, AVAILABLE VEGAN)

This is my favourite Brazilian dish and therefore my speciality! This fish stew is made with firm white fish, onions, garlic, bell peppers, tomatoes, parsley, cilantro, palm oil and coconut milk served with a portion of  white basmati rice seasoned with lemon zest, lemon juice and chives.

VEGAN MOQUECA (HEART OF PALM, PLANTAIN AND RED PEPPER STEW) SERVED WITH LEMON RICE & CASSAVA FLOUR WITH ONIONS AND COCONUT - VEGAN (GLUTEN FREE, VEGAN, LACTOSE FREE)

This is the vegan version of the original moqueca, it is made with heart of palms, plantain, onions, garlic, bell peppers, tomatoes, parsley, cilantro, and coconut milk served with a portion of  white basmati rice seasoned with lemon zest, lemon juice and chives.

SLOW ROAST PICANHA WITH COARSE SALT AND BUTTER, SERVED WITH ROAST POTATOES AND CHIMICHURRI (GLUTEN FREE)

If you’ve never tried this sirloin cap, prepare to meet a new favorite. These juicy cuts are a favorite in Brazilian steakhouses for a reason, and oven-roasted just offers added delight. Encased in a salt crust and butter, you’ll get balanced textures to match the dramatic flavor, and with a warm roast potato and fresh chimichurri on the side

PLAIN WHITE RICE WITH GARLIC&SOY MUSHROOMS SERVED WITH PICKLED CUCUMBER (VEGAN, GLUTEN FREE, LACTOSE-FREE)

This yakisoba recipe is filled with yakisoba noodles, juicy chicken, carrots, cabbage, bell peppers and aromatic garlic, ginger and green onions bathed in a fruity, spicy, sweet and tangy sauce. For the vegan version, replace chicken with fried tofu.

Perhaps one of Japan’s best-known street foods, it’s thought to have originated from Chinese cuisine and became a popular fast-food meal in the black markets that popped up around Japan after the war.
